This is a nice weekend project which also prepares you for a busy week. It’s fun and easy and, after making it, you don’t have to prepare anything in the morning for breakfast. By making it your self instead of buying muesli you can choose what goes in it. Enjoy!

Serves 5
Ingredients:
75g rolled oats
75g mixed nuts of your choice
50g dried fruit of your choice
½ tsp ground cinnamon
1/8 tsp salt
½ tsp vanilla extract
25ml vegetable oil
50ml golden syrup
Instructions:
1. Heat the oven to 180C/160 fan/gas 4. Line a baking sheet with baking parchment to prevent it from sticking.
2. Place the ingredients in a large bowl and mix well. Tip the mixture onto the lined baking sheet and spread out evenly.
3. Bake for 25-30 minutes until golden. Give the granola a stir every 10 mins to make sure it dries out evenly and doesn’t clump together too much. Keep an eye on it as nuts can burn easily.
4. Once it is baked, remove it from the oven and leave to cool completely on the tray. Break up any large clumps with a wooden spoon.
Will keep for up to one month in an airtight container.
